A Concoction for a Tough Week

Warm spring days have arrived, and as an accompaniment, here's a recipe for a tall glass of sunshine to brighten up a gray day.

I don’t know about you, but it’s been a challenging week already.

I’ll spare you the details, but it sure would be nice to have a refreshing picker-upper.

You know the feeling: Your child just took the puppy for a walk, and they came into the house tracking mud, along with puppy’s own creations all over the just-cleaned carpet. Or you got rear-ended on the way home by a cow (not the animal). Or you made an offer on the short-sale home but were outbid. Or your financial adviser, you found out, was mentored by someone named Madoff.

I got home after one of those days, and my husband, who has been miserably sick with a bad cold for two weeks, decided to fix us both a nice beverage to detract from the whirl of disorder. Thanks to Husband, it did the job—until just after the last sip.

A welcome treat, the drink is similar to a pina colada, but it's much lighter and definitely refreshing.

It is a lively mixture of tropical flavors, including mango, coconut and pineapple, decorated with an orange slice and a touch of grenadine. It can be easily altered to be non-alcoholic.

Here’s the recipe, if you’d like to try it:

Howard's PMC  Cocktail (pineapple, mango, coconut)

1 ounce mango syrup 
3 ounces coconut rum  
4 ounces pineapple juice 
½ cup ice
Grenadine, a few drops
½ ounce Myer's Rum

The first four ingredients are thrown into a blender until well-blended. Pour the mixture into a tall glass. The last two items are added to the mixture. Put an orange slice on the edge of the glass, and enjoy.

Omit the rums for a welcome, revivifying no-alcohol beverage anyone can enjoy.
